Ines Bertinovec, DVM, was born in 1968, and completed her veterinary studies at the Faculty of Veterinary Medicine, University of Zagreb. Since 1997, she has been working in the meat industry in various positions related to product research and development, and since 2005, she has been the director of development. In her professional career, she led the development projects of the complete product range for the meat industry company PIK VRBOVEC plus d.o.o., among which the key projects include: The CLEAN LABEL Project – Development of a line of meat products without additives, which resulted in a line of meat products without added nitrites/nitrates, phosphates, and carrageenan, realized with the participation of partners from the Croatian Public Health Institute and co-financed from the EU Operational Program Competitiveness and Cohesion; The project aimed at reducing the salt content in PIK brand meat products to achieve the conditions for the nutritional claim of 25% less salt, realized in collaboration with the Center for Food Control of the Faculty of Food Technology and Biotechnology in Zagreb; The reformulation project of PIK brand meat products "0% - without flavor enhancers, artificial colors, gluten, and soy" aimed to exclude flavor enhancers, dyes, gluten, and soy. From 2015 to 2023, Ines participated in numerous international conferences and congresses with lectures and presentations on topics such as contemporary trends in the Croatian meat industry, reduction of salt content in meat products, and the development of a "clean label" line of meat products.
