Vanja Puškar is the founder and curator of the New Balkan Cuisine concept, within which the restaurants Iris, Iva and Tisa operate. He was born in 1986 in Prijedor, Bosnia and Herzegovina, and after finishing school he continued his career in Belgrade. His culinary approach is based on the use of local products in combination with modern processing techniques and he strongly supports and promotes local producers.
