Participant introduction

Yoji Tokuyoshi

In fact, his path should have taken a completely different direction, given that he was the heir to the Japanese pharmacy dynasty, but madly in love with cooking, he decided that gastronomy was his calling after all. And good that it is! After nine years as a sous-chef in Osteria, Francescani opened his own restaurant in Milan and after only ten months received a Michelin star. Yoji Tokuyoshi is highly respected for his very particular style by applying Japanese methods and techniques to Italian ingredients.
