Ivana Stojmilović is the Head of Production and Development at Boogie Lab, an innovative company specializing in food product development, with a particular focus on sourdough baking. She graduated in chemical process engineering from the Faculty of Chemical Engineering and Technology (FKIT), and further honed her expertise in France, where she worked on formulation development at the Laboratoire de Chimie Agro-Industrielle (LCA) at ENSIACET.
At Boogie Bakery, she leads the research and development of new products, focusing on fermentation processes, the stability of sourdough starters, and the application of clean label principles. Through her innovative approach, she explores how natural fermentation and minimal processing can enhance the quality and nutritional value of bakery products, making them suitable for modern consumer demands.
At the Weekend Food Festival, she will participate in the panel ""The Future of Baking – New Rules of the Game,"" where she will discuss innovations in sourdough baking, industry challenges, and the new standards shaping the future of bread and bakery products.
