Chiara Pavan was named the best chef in Italy in 2018 by Le guide dell'Espresso. She started working in the kitchen after finishing her philosophy studies in Paris and decided to study at the Alma Culinary Academy. She soon began working at Da Caino in Tuscany, a restaurant with two Michelin stars; and from Tuscany she went on to the Zum Lowen restaurant in South Tyrol as a sous-chef. Since 2017, she has, along with Francesco Brutto, headed the Michelin-starred Venissa restaurant on the Venetian island of Mazzorbo. Chiara and Francesco strive to preserve and promote indigenous plants, fish and vegetables. The menu includes smoked eels, artemisia butter, smoked seaweed and other locally-sourced delicacies.
